Topped Enchilladas step by step
- Add pepper Dice the chicken and place in a bag with some oil and the spice mix. Leave to marinate for atleast 30 minutes.
- Pre-heat frying pan with oil and place chicken in and fry until half way cooked.
- Place sliced onions and mushrooms in frying pan and cook until mushrooms wiltered and onions soft.
- Add sliced peppers to the mix for last 5 to 10 minutes so slightly soften.
- Place salso and mozzarella on wraps and fill making sure you leave some for toppings.
- Place filled wraps in oven proof dish and place salsa and extra filling on top of wraps and sprinkle mozzarella on top.
- Cook in oven gas mark 7 until melted and browned off to preference. Serve and enjoy.
