Egusi Soup instructions
- Rough blend the pepper and slice the onions and set aside.
- Wash the meat and season then boil.
- Put pot on gas Heat your oil the saute the onions and locust beans together for awhile.
- Add in the pepper and allow to fry then add in the stock cube cover again to fry. add in meat and the cow skin dry fish and let it boil.
- In another pot add in oil saute it then make a paste of your grinded melon with water(I use my meat stock) slice some onions and little salt mix and cut inside the heat oil add water little by little on the side of the pot the Fry the melon.
- After that add ugu to the stew then add your fry melon along side. At this junction I don't cover my pot so the vegetable leaf can retain it colour.
- Taste and adjust with salt..
- Serve with any swallow of your choice or boil rice.
