It is very simple and also tastes great with both idli and dosa. You can do this with or without the vegetables. I did not use vegetables as I did not have. You can cook Sambar idly using 21 ingredients and 15 steps. Here is how you cook it.
Ingredients of Sambar idly
- It's 1/2 cup of Toor Dal.
- It's 1 of Carrot.
- It's 1 of Potato.
- It's 2 of Tomato.
- You need 5 of Shallots.
- You need 1 of Onion.
- You need 1/4 tsp of Turmeric powder.
- It's 1 tsp of Salt.
- Prepare of Roasted items:.
- Prepare 2 tsp of Coconut oil.
- You need 3 tbsp of Coriander seed.
- You need 1 tsp of Cumin seeds.
- It's 1 tbsp of Channa Dal.
- It's 1 tbsp of Urad Dal.
- Prepare of small piece Asafetida.
- It's 1/2 tsp of Peppercorns.
- It's 5 of Red chili.
- Prepare 1 strands of Curryleaves.
- It's 3 tbsp of Grated coconut.
- Prepare 1 tsp of Jaggery.
- Prepare of Tamarind - Small lemon sized.

Sambar idly instructions
- Pressure cook the Dal for 5 whistle. Smash and keep it aside..
- In a heavy bottom vessel or kalchatty, add onion, shallots, carrot and potato..
- Cook the vegetables until it soften by adding turmeric powder, salt and water..
- In a pan, add oil, cumin seeds, coriander seeds, urad Dal, channa Dal, asafetida and peppercorns. Fry it for few mins..
- Then add red chili, grated coconut and curry leaves. Fry in medium flame until it gets golden reddish in color..
- Switch off the flame and allow it to cool..
- Once it cools, grind this with jaggery and tamarind to a fine paste..
- Fry the grinded paste in the same pan until it changes the color..
- Add fried sambar masala and cooked dal to the vegetables..
- Mix well and add water to get a medium thick consistency. Adjust the salt if required..
- Allow it to boil for 10 mins in medium - low flame..
- Add coriander leaves and switch off the flame..
- Heat oil and splutter mustard seeds. Add curry leaves. Pour this seasoning to the sambar..
- Take 2 idlis in a plate and pour the piping hot sambar on top until it sinks in it. Soak this for few mins..
