Note that one side of the roast should have a layer of fat, the other side should have distinct lines indicating the grain of the beef. Ingredients of Corned Beef and Cabbage
- You need 1 of Corned Beef brisket (with the spice packet).
- You need 1 (12 oz) of Guinness black lager beer.
- Prepare 2.5 cups of Water.
- You need 1 of Onion sliced.
- It's 6 of Garlic cloves smashed.
- It's of Creole mustard.
- Prepare 3 of Tblsp butter.
- Prepare of Carrots.
- You need of Red potatoes (small).
- Prepare of Green Cabbage sliced.
- Prepare of Thyme.
- It's of Bayleaves.
- Prepare of Whole grain mustard dipping sauce (optional).
Parents used canned corned beef, sliced as sandwich meat. Thought I may buy sliced corned beef from the deli and lay it on the cabbage. Remember that the key would break and Dad would finish opening with can opener. Serve the corned beef next to the cabbageโฆand dig in!
Corned Beef and Cabbage step by step
- Place the onion, garlic, and butter in the pot.
- Place your brisket (fat side down) on top of that with the lifting handles.
- Rub Creole mustard all over the top of brisket and add the spice packet.
- Next pour your beer and water in the sides (I only had Coors light).
- Close the pot and make sure you put the valve in the sealing position and set it for 120 minutes on pressure cook (I had a 4.10 pound brisket).
- Once the brisket is done lift it out of the pot to rest and cover with foil.
- Next add in your potatoes, carrots, cabbage, bay leaves and thyme, close the lid and set on pressure cook for 3 minutes.
- When that is done serve together with the brisket and ENJOY ๐๐.
- Don't forget to cut against the grain !!.
Variations: Serve with a dish of grainy mustard. Shred the corned beef with two forks if you prefer that consistency! Make a leftover corned beef sandwich with a slice of brisket and a wedge of cabbage on rye. Add the cabbage on top of the potatoes and add onion and carrot on top of the cabbage. Check the cabbage to see if it is tender.
