Ingredients of Manly Hiroshima-style Okonomiyaki
- It's 50 grams of ●Plain flour.
- It's 120 ml of ●Water.
- You need 2 of packets Yakisoba noodles (steamed).
- Prepare 1/4 of Cabbage.
- It's 1/4 of Carrot.
- Prepare 1 of Pork.
- It's 2 of Eggs.
- You need 1 of Dried bonito powder.
- It's 1 of Okonomiyaki sauce.
Okonomiyaki is a Japanese savory pancake. Depending upon the region of Japan, okonomiyaki is cooked differently. Hiroshima style okonomiyaki, is unique to the prefecture of Hiroshima where the pancake ingredients are cooked in separate layers. This Hiroshima style okonomiyaki is special to me because it reminds me of one of my trips to Japan.
Manly Hiroshima-style Okonomiyaki instructions
- Whisk the ● flour and water (if you have time, leave to rest because it will easily spread on the pan later)..
- Slice the cabbage and julienne the carrot..
- Pre-heat the hot plate to 300-320ºF/150-160ºC. Grease with oil and pour the batter from Step 1. Shape into a circle and sprinkle with dried bonito powder..
- Loosen the noodles and place on top of the batter. Pile the cabbage, carrot and pork (in this order) on top..
- After frying for 5 minutes, pour Step 1 batter over the pork and flip over..
- Neaten the shape with a spatula and cover with a lid. Steam-fry for 5 minutes and uncover to fry for further 5 minutes..
- Crack eggs on the electric griddle and break the yolks. Place the okonomiyaki on top of the eggs. You don't have to flip over, just slide onto the eggs. The okonomiyaki should be meat-side down..
- Flip over with the egg sides up and transfer to serving plates. Drizzle okonomiyaki sauce and serve..
- You can use any toppings you like such as dried bonito flakes, aonori, mayonnaise or chopped scallions..
For this variation, we're using yakisoba noodles and adding in a sunny side up egg. It's best served hot off the stove and topped with Kewpie Mayonnaise, Okonomiyaki sauce and of course - aonori, katsuobushi, and shichimi pepper. ~Different From Kansai-Style!~ Unlike the Kansai-style okonomiyaki that is grilled after the various ingredients are mixed together, the Hiroshima-style okonomiyaki is done by first dissolving the flour in water and grilling the mixture lightly, then placing ingredients such as shredded cabbage and yakisoba/yakiudon on top of that, and finished by topping it off with a thin omelet.<br></p. The Hiroshima style okonomiyaki starts out with a layer of the batter being poured onto the pan that is topped with a pile of shredded cabbage and bean sprouts and then some shrimp and bacon. The pancake is cooked until the batter in golden brown and then it is flipped and cooked until the bacon is nice and crispy. Unlike the more mainstream version of okonomiyaki, where the batter is mixed with the cabbage and other ingredients, each ingredient in Hiroshima okonomiyaki is stacked on top of each other and covered with a layer of yakisoba noodles, egg, tasty sauces, and toppings.
